Lemon Poppy Seed Muffin

1/4 c old fashion oatmeal
1 Lemon Chiffon Pudding (HNS)
1 egg
2 oz low fat cottage cheese - 1/4 c
1/4 c water
1 teaspoon lemon extract
1 teaspoon poppy seeds

Mix all ingredients in a blender or food processor until smooth. Pour into 3x5 small loaf pan. (I like making muffins instead)
Bake at 350 degrees for 35-40 min. (about 20-25 for small muffins)
