Mock Potato and Chicken Soup

4oz (weighed) steamed cauliflower
2oz cooked chicken
1oz low-fat shredded sharp cheddar cheese
2 tbsp HNS Chicken Bouillon
Mrs. Dash Table Blend
Fresh Pepper

Steam the cauliflower until it is very mushy. Put the cauliflower in the blender with the HNS Chicken Bouillon (save the rest of the bouillon for another meal). (I like my soup thick, so add more bouillon if you want it soupier). Blend until very, very creamy, or until you get your desired consistency. Once blended, pour into a sauce pan, cook on medium low. Add chicken, cheese and spices. Heat until cheese mixes completely. For dinner, I crunch up my garlic flavored melba toast and put it on top. mmm it is so good! Enjoy!

This is 1 veggie and 1 protein and 1/4 clear (which I don't count).
Lunch: Just add a fruit
Dinner: Just add a Bread/Starch
