Grilled Shrimp w/ Vietnamese Coleslaw

1 cup cabbage, thinly sliced
1/4 cup cucumber, halved lenghtwise and thinly sliced
1/2 quartered green pepper, thinly sliced
1 Tbsp. green onion, finely chopped
1 Tbsp. chopped fresh mint - (I put dried)
2 pkts. artificial sweetner
1 tsp. lemon juice
pinch of crushed red pepper and sea salt -(I used Mrs.Dash Spicy and no salt)
4 oz. shrimp, peeled and deveined

Combine first 8 ingredients in a large bowl; toss well.
Thread shrimp on skewer -(I skipped this and put directly on my George Forman Grill)
Place kabob on grill, cook on each side until done.
Place coleslaw on a plate and top with shrimp.
One last thing on this recipe I tossed the shrimp in Mrs. Dash spicy before grilling.
